Satake Shiro Gyuto
This knife model is called Gyuto (chef's knife) and has a blade length of 21 cm. The knife has a very durable ABS handle and the blade is made of Molybdenum Stainless Steel.
The knives are manufactured in Seki City, Japan. Seki is known as the capital of knives, and approximately 47% of Japan's knife production takes place in this small town near Osaka.
Satake Cutlery is the name of the factory that manufactures these knives. The factory is owned and operated by Mr. Yasuhiro Satake himself. The factory has been in operation since 1947.
Japanese knives are traditionally made from harder steel than Western knives and are sharpened to a lower degree, which makes them feel and actually be sharper than Western knives.
Wash and dry the knives thoroughly by hand after each use. Store them on a magnetic strip, preferably, and they will last for generations. Maintain them with a sharpening steel and sharpen them on a wet stone when necessary.
